It was during the first decades of the 20th century that the taverna experienced its golden age. Tables filled with meze, fresh fish, meats, and wine transformed tavernas into spaces of entertainment, music, and dance. Over the years, as Greece developed, the taverna’s menu expanded beyond simple fried dishes. Oven-baked and casserole dishes were gradually introduced and began gaining popularity.

In their earliest modern form, tavernas were born in working-class neighbourhoods, serving as gathering spots for labourers to relax after a hard day’s work. However, over time, the taverna’s charm transcended the working class. Intellectuals, writers, and students were also drawn to these bustling hubs, engaging in lively discussions over a glass of wine. The addition of live music, particularly rebetiko (urban popular songs), further enhanced the taverna’s allure.

A Refuge for Refugees

The end of the Greek-Turkish War in 1922 brought with it a large wave of refugees in Greece, along with new traditions, particularly in gastronomy. This was the period when new dishes such as soutzoukakia and the beloved moussaka made their way onto the taverna menu.

At the same time, the refugees from Asia Minor found solace in the community offered by the taverna. Women, who had traditionally been confined to the home and domestic tasks, began to venture out with their husbands to visit tavernas, breaking away from the societal norms of the era.

The Golden Age of the Taverna

The interwar period marked a golden age for the Greek taverna. Many establishments transformed into oinomageireia, specialising in wine and hearty, home-cooked style food. These tavernas often featured live music, creating a festive atmosphere that captivated both locals and visitors.

Particularly during the 1960s and 1970s, the taverna became a magnet for tourists, who fell in love with the unique Greek hospitality and the warmth that this space exudes. From then until today, the taverna remains a symbol of Greek life and culture, preserving its authenticity while adapting to modern demands and trends.
