Soupies mavro pilafi (Cuttlefishes black rise)


-1 kilo of cuttlefishes

-½ cup of olive oil

-5-6 small cups of rice

-salt , pepper

-1 spoon of tomato paste

-1 big chopped onion




Clean the cuttlefishes carefully in order not to break the ink bag of at least half of the fish as this is what gives the rise its black colour and special taste.

Sauté your onions in olive oil as well as the sliced cuttlefishes for a bit.

Pour 3-4 cups of water, the tomato paste, salt, pepper and let the cuttlefishes to slowly simmer.

Add the rice, water if needed and stir carefully. The rice will slowly absorb the liquids therefore you’ll know it is ready.
