Orange Cake

In Greece, aromas are almost always accompanied with tastes, so what about having an orange cake, which would also work as a great Christmas treat especially if you sprinkle it with some icing sugar and cinnamon powder after it has been baked.

All you need is:

250 gr of olive-oil
1 glass of sugar
4 eggs
1 teaspoon of vanilla extract
1 big orange
2 cups of all-purpose flour
2 teaspoons of baking powder

Instructions:

Whiz the whole orange into a food processor until you have a pulp.
Blend sugar with eggs for 10 min. Add olive-oil, vanilla powder and the orange pulp.
Mix flour with baking powder and add it to the mixture.
Bake for an hour at 180°C.

Sprinkle the baked cake with icing sugar and cinnamon powder.

Tip: replace orange with 2 lemons and you would have a lemon cake instead.
