Lenten Biscuits

Biscuits are everyone's favourite baked goods, especially for the young! During the Lent period ingredients like eggs, butter and milk are replaced by olive oil, orange juice, cinnamon, carrot, wine, apple and more. All you need is lots of imagination.
Cooking can be pleasurable for children of all ages so go ahead and bake your Greek Lenten biscuits with your family. Let the young knead the dough and shape the cookies into braids. Baking them will fill your house with sweet aromas.
The cookies are delicious and go along with your morning coffee or tea in the most savoury way. They are a healthy treat you can nibble on day long. We invite you to enjoy the Lent period with the following scrumptious cookie recipe… we bet you won’t resist having more than one at a time.


Cookies with olive oil and orange juice

450 ml of olive oil
300 gr of sugar
100 ml orange juice
1 tsp baking powder
1 tsp baking soda
1 tsp of cinnamon
600 gr of all purpose flour

Place the lukewarm olive oil with sugar in a large bowl and mix until the sugar dissolves. Dissolve the baking soda in the orange juice and immediately add it in the bowl.
Mix the baking powder with the flour, add the cinnamon and knead the dough until it doesn’t stick to your fingers.
Shape the cookies and bake for 20 to 30 minutes at 170o C.
